MENU 11: LENTILS AND SALAD

1. LENTILS WITH THYME

Servings: 6

Ingredients:

2 cups uncooked lentils

2 carrots

5-6 cloves of garlic

2 onions

2 tomatoes

2 tablespoons sunflower oil

½ tablespoon tomato paste

Spices: 2 teaspoons savory, 1 teaspoon thyme, 2 tablespoons parsley, salt to taste

Instructions:

Clean, peel and cut the vegetables into small pieces. Put them in a saucepan and saute them with oil and 2 tablespoons water. When soften, add the cleaned and washed lentils. Pour over the dish with 4 cups of hot water; add salt and tomato paste mixed into a little water. Cook the dish on low heat with the lid on until lentils become well soft. Before removing the pan from the heat, sprinkle the dish with savory, thyme and parsley. This dish is delicious hot or cold.
